There is no downgrade route from Windows 10 Enterprise to Windows 10 Pro, you will need to clean install Windows 10 Pro and buy a new licence.
A clean install will have to delete all data on the device so the first thing to do is to backup all you personal files. Once you can boot from the USB drive you select Language then Install now and Custom install, at that point delete all partitions one at a time until you only have unallocated space, select next and follow the prompts.
Microsoft Office is different you may still be able to use the licence providing you can use the same email account after leaving the university. I don't necessarily need Windows 10 Pro. Even Home is fine. All I want is a legitimate Windows copy on my machine.
